George Albert Zabriskie (1868-1954) was a Polish-American businessman, entering the flour business in New York City after leaving school in 1883. As a representative of The Pillsbury Company, one of the world's largest producers of grain and other foodstuffs, Zabriskie was appointed national administrator for sugar and flour by Herbert Hoover. His work with food supply and provisions during the First World War led him to be decorated by several European countries, and he became director of the Columbia Baking Company and the United States Sugar Association following the War.
Zabriskie's friendship with Herbert Hoover developed over this time, and the pair frequently corresponded on both political and amicable matters. A keen collector of art and books, George A. Zabriskie also became a skilled amateur bookbinder and would send his friends examples of his work as presents.
Zabriskie was a patron of several American art, cultural and historical societies. He was elected to the American Antiquarian Society in April 1940.
